This is one of my family’s favorite breakfasts. They are a little bit like crepes.
1 3/4 cups milk
1 cup flour
1 teaspoon salt
2 tablespoon sugar
1 tablespoon oil
In a blender, mix the eggs and milk.
Add the flour, salt, sugar, and oil and blend until smooth.
(We double the recipe, so your blender won’t be this full.)
Pour about 1/4 cup of the batter onto a lightly greased griddle or skillet.
Then, run a rubber spatula around the edges of the pancake…
…and flip it over.
Continue cooking until it is cooked all the way through.
Repeat with the remaining batter.
Spread one of the pancakes with your favorite filling, roll up, and enjoy!
