Ginger Cookies

These cookies may be thin, but they are still soft in the middle.

Makes 48


1 cup granulated sugar

1/2 cup brown sugar

1 cup butter, softened

1 egg

1/3 cup molasses

2 1/4 cups flour

2 teaspoons ground ginger

1/2 teaspoon ground nutmeg

1 teaspoon ground cinnamon

2 teaspoons baking soda

1/2 teaspoon salt

Grease 2 cookie sheets.

With an electric mixer, cream 1/2 cup of the granulated sugar, the brown sugar, and the butter until fluffy.

Add the egg and continue beating to blend well.

Add the molasses.

Stir the dry ingredients into the butter mixture.

Refrigerate the dough for 30 minutes. (The dough is soft, so you might have to freeze it).

Preheat the oven to 325 degrees F.

Place the remaining 1/2 cup sugar in a bowl.

Roll tablespoons of the dough and roll them in the sugar.

Place 2 inches apart on the prepared baking sheets.

Bake for 12 minutes.


Add 1/4 cup of flour to the dough to make gingerbread men.
