Apricot Bars

These bars are delicious with any flavor of preserves.

Makes 15 bars


3/4 cup butter or margarine

1 cup sugar

2 cups all-purpose flour, sifted

3/4 teaspoon salt

1/2 teaspoon baking soda

1 cup chopped pecans

1 1/2 cups unsweetened shredded coconut

(if you use sweetened coconut, it will be extra sweet)

16 oz (2 cups) apricot preserves

Preheat the oven to 400 degrees F and grease a 9 by 13 inch baking dish.

Cream together the butter or margarine and sugar.

Add the dry ingredients (the mixture will be crumbly).

Mix in the nuts and coconut.

Press 4 cups of the mixture into the bottom the prepared dish.

Bake for 10 minutes. Remove from the oven.

This is my mom’s homemade apricot preserves. I will be putting the recipe on this blog sometime within the next 2 months.

Now, back to the recipe.

Spoon the preserves onto the half-baked crust and spread level.

Sprinkle the remaining crumb mixture over the top.

Bake for 20 minutes.

Let cool and cut into bars.
