These are one of my mom’s favorites.
1 cup flour
1/8 teaspoon salt
3 tablespoons unsweetened cocoa powder
1/2 cup butter, softened
2/3 cup sugar
1 egg white, lightly beaten
Mix together the flour, salt, and cocoa powder. Set aside.
With an electric mixer, cream the butter until light.
Add the sugar and continue beating until fluffy.
Beat in the egg.
Add the dry ingredients and stir to blend.
Gather the dough into a ball, wrap in plastic wrap, and freeze for 1 hour.
After 45 minutes, preheat the oven to 375 degrees F.
Roll the dough into walnut sized balls.
Roll these balls into thin ropes.
Shape the ropes into pretzels.
Transfer to greased cookie sheets.
Brush the pretzels with the egg white and sprinkle with the sugar crystals.
Bake for 8-10 minutes.
