This salad goes with everything!
2 ears of corn
1 medium cucumber, cut into bite-sized pieces
2 tomatoes, cut into bite-sized pieces
1/2 avocado, cut into bite-sized pieces
salt and pepper, to taste
First, cook or steam the corn in boiling water for 3-5 minutes.
Cut the corn off of the cob.
Mix together the cucumbers, tomatoes, and corn.
Add the avocado, salt, and pepper.
