Plum Cobbler

My whole family loved this!  It was a great way to use the plums that came in our basket from Bountiful Baskets.

Serves 12-15


7 cups pitted and quartered plums (about 15 plums)

2/3 cup butter, softened

1 1/2 cups granulated sugar

2 eggs

3 cups all-purpose flour, sifted

1 tablespoon baking powder

1/2 teaspoon salt

2 cups milk

2 teaspoons vanilla extract

1 cup granulated sugar

1/2 cup butter, softened

1/4 cup all-purpose flour

1 teaspoon cinnamon

Preheat the oven to 350 degrees F.

Grease a 9 by 13 inch baking dish.

Place the plums in the bottom of the prepared baking dish.

With an electric mixer, beat together the 2/3 cup of butter and the 1 1/2 cups of granulated sugar until light and fluffy.

Beat in the eggs, 1 at a time.

Add the 3 cups of flour, baking powder, and salt.

Mix in the milk and vanilla extract to make a smooth batter.

Pour the batter over the plums.

In a small bowl, mix together the 1 cup of sugar, 1/2 cup butter, 1/4 cup of flour, and the cinnamon.

Sprinkle over the batter.

Bake in the preheated oven until a toothpick inserted into the center of the cobbler comes out clean, 45 – 60 minutes.
