Easy, healthy, and delicious.
Makes 1 loaf
1 cup shredded apple (about 2 medium apples)
1/4 cup sour cream
2 egg whites
scant 1 1/2 cups all-purpose flour
2 tablespoons packed brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
Preheat the oven to 350 degrees F.
Grease an 8 by 4 by 3 inch loaf pan.
With an electric mixer, beat together the apple, sour cream and egg whites.
Add the remaining ingredients.
Spread the mixture in the prepared pan.
Bake in the preheated oven for 35-45 minutes or until golden brown.
Let cool in pan for 5 minutes, then remove from the pan.
Cool completely before slicing.
