Makes 3-4 dozen
1 cup butter or margarine, softened
1 1/2 cups granulated sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon salt
With an electric mixer, cream the butter and granulated sugar.
Add the eggs one at a time, then the vanilla.
In another bowl, whisk together the flour, cocoa, baking soda, and salt.
Gradually add this to the creamed mixture.
Cover and refrigerate for 1 hour.
Preheat the oven to 350 degrees F.
Roll the dough into 1 inch balls and place 2 inches apart on ungreased cookie sheets.
Flatten slightly and bake for 8-10 minutes, or until the edges of the cookies are firm.
Remove to a wire rack.
Dust warm cookies with confectioners’ sugar.
