My mom’s new favorite cookie.
Makes about 3 dozen
1 cup all-purpose flour
3 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup butter or margarine, softened
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 1/4 cup rolled oats
1/2 cup semisweet chocolate chips
Preheat the oven to 350 degrees F.
Mix together the flour, cocoa powder, baking powder, baking soda, salt, and cinnamon. Set aside.
With an electric mixer, beat together the butter, brown sugar, and granulated sugar.
Beat in the egg and vanilla.
Slowly stir in the dry ingredients.
Add the oats and chocolate chips.
Drop by tablespoonfuls onto greased cookie sheets.
Bake for 8-10 minutes.
Let them sit for 5 minutes, then transfer to a wire rack to cool completely.
