Delicious cake-like cookies.
Makes about 60 cookies.
1 1/2 cups butter (no substitutes), softened
2 cups packed brown sugar
1 cup granulated sugar
1 (15 oz) can solid pack pumpkin
1 teaspoon vanilla extract
4 cups all-purpose flour
2 cups rolled oats
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
2 cups semi-sweet chocolate chips
Preheat the oven to 350 degrees F.
In a large bowl, cream together the butter and sugars.
Beat in the pumpkin, egg, and vanilla.
Combine the flour, oats, baking soda, cinnamon, and salt; gradually add to the creamed mixture.
Stir in the chocolate chips.
Drop by tablespoonfuls 2 inches apart on ungreased baking sheets.
Bake for 10-12 minutes.
Transfer to wire racks to cool.
